How can i make a simple beer or wine without using sugar?!
I want to make a large quantity of beer or wine with a relatively high alcohol content without wasting sugar!. For example, if i had a bag of dry corn kernels, how would i be able to ferment that!? I understand i need to convert the starch to sugar but how do i do that!?

All beers and wines use sugar!. but the sugar need not be table sugar!. Most decent beers get their sugar from the malts or malt extracts!. A very few use brown sugar, molasses, honey, or some other sugar for extra flavoring!. The only generally used sugars are for priming (carbonating) the beer!. This is most often done with corn sugar!. Generally, if you buy a kit or follow a recipe, you will not be asked to add sugar, except possibly for priming (and that can be avoided if you have the right equipment/supplies)!.
With wine, you have to reach the right level of sugar!. If the grapes were harvested at the peak of ripeness, affected with "noble rot", or allowed to freeze on the vine, you will probably not need to add any table sugar; the yeasts will have enough to eat!.
Corn kernels can be fermented but it gets trickier!. First, you have to mill them so that there is more surface area exposed!. You also have to treat them with amylase, an enzyme that changes starch to sugar!. That will give the yeasts something they can eat!.
I tried making cornmeal wine -- once!. On the other hand, I think that my potato wine is pretty decent!. That uses the starch from boiled potatoes plus amylase (any homebrew shop should carry it)!.Www@FoodAQ@Com
