Question: I need a wine recommendation, please!. Thanks!.!?
I understand that one would normally serve either a Merlot or Cabernet with a typical grilled steak, maybe even a Shiraz or Zinfandel or Chianti, depending on tastes!. But I wonder what one would serve if that steak were grilled over hickory wood!. also, if that hickory grilled steak was covered in garlic butter!.

I was hoping to dine at a restaurant nearby for the first time, but I've never had wine with a hickory grilled steak, let alone a hickory grilled steak covered in garlic butter (hich is what they serve there)!.

Please don't say "Tell them to take off the garlic butter!." or "Tell them to cook it regular!."!. Thanks for any recommendations!.Www@FoodAQ@Com

hickory tends to give off more smoke giving food an almost sweet and spicey eucalyptus flavor,this is a flavor that can be found in many well oaked cabs, especially from napa and chilean cabs!. bleu cheese needs far more consideration than garlic butter!. sharp pungent cheeses tend to smack around even big body cabs,this would be a job for sweeter wines with higher alcohol content like a good zinfandel, syrah or a petite syrah!.I would go wth petite syrah , frogs leap petite syrah in fact, its a huge wine with great dark fruit flavors and enough sweetness and alcohol to break down the strong flavor profile of bleu cheese but elegant enough not to over power the hickoy smoked meat flavor-cheersWww@FoodAQ@Com

You drink one of the reds of course with any steak!.
Is there a rule that you can't drink a red with garlic butter!?
I never heard that( could be though)!.

Steak=Red wine!.
Blue cheese = Strong Red or Sweet wine ie!. Port or Sauterne

It's up to the individuals taste!.
For instance with blue cheeses, the rule of thumb is strong reds or sweets!.
However there's also a rule of thumb that says Rieslings go well with all cheeses!.
Thats what it is!.

That being said, I would go with a nice Merlot( thats what I like) but if you prefer Cab, you would also be correct!.

Why don't you wait until you get there and see what looks good on the wine list!? If you make your decision now you may be disappointed to find that nothing like what you want is available there!. If the wine list is very long, they should have someone you can ask for advice!.Www@FoodAQ@Com

If you're asking to "try something new" then i would pair a light (colored) wine with heavy food!. most people think that doesn't "go" but I like it better and it feels more balanced to me!. (light and heavy =neutral kinda theory)Www@FoodAQ@Com

I would recommend a Old Vine Zinfadel that always goes nicely with hickory grilled meat!. And yes I think the Blue Cheese could go really nice with it!.Www@FoodAQ@Com
