A bottle of dry red wine (merlot) that has been opened has a stopper in it. Should it be placed in a fridge?!
best method to keep it tasting great!?Www@FoodAQ@Com
Answers:
No!. Red wine should not be refrigerated!. A good stopper will keep it okay for up to one week!. I mean the kind of stopper that pumps out the air and then seals!.Www@FoodAQ@Com
Placing a red wine in the refrigerator will slow down the aging process but will also cold stabilize it!. When you warm it up it will have lost some of its zing and there will be extra crystals in the bottom of the bottle!.
A young red wine will probably improve if re-corked and drunk the next day!. Beyond that you are at the mercy of things you cannot control!. Exposure to oxygen and CO2 is the main thing that kills wine!. Anything you can do to minimize that, vacuum etc, will extend the wines life!. Transferring the wine to any other vessel might reduce the available headspace in the bottle but will increase the amount of dissolved O2 and CO2 so may not help appreciably!.Www@FoodAQ@Com

Depends on your plans to drink it!. Within a couple of days, yes, a cool dark cabinet will be fine!.
If you intend to keep it more than a week, this will not work!. You should look to the refrigerator, preferably a place furthest away from the cooling elements!. Here, you will want to take the wine out 30 minutes before serving it to allow it to come back up to cellar temp (~55-65F)!.
But, my favorite method would be to use a spare 375mL bottle!. If you only have 1/2 the bottle left, this will fit nicely into such a bottle!. With a cork in this nice and tight, it will last just like an unopened bottle!.Www@FoodAQ@Com

It should be kept in a cool and dark location!. It should be consumed within a few days!. Keeping it in the refrigerator will not hurt it!. Just let it come up to room temperature before drinking!.
