Where can i buy amylase to saccharify corn starch online?!
I am trying to brew a kind of corn beer, but without adding any sugar!. I know that i need amylase but i am not sure what kind i need, and i have no idea where to buy it since there are no brewing stores in my area!. There are two traditional ways of making chicha!. In one, malted corn is used!. Otherwise, unmalted corn is ground, a small amount of water is added, and balls of this paste are swished around in the mouth before mashing!. Amylase enzymes in saliva perform the starch conversion and any bacteria is killed in the boil!.
I've brewed chicha myself in the past, but used malted corn called "Sprouting Corn-Maiz de jora para chicha" from an international market called Jungle Jim's in Cincinnati!. The label had the following information:

If you want to brew another batch, try contacting them to get a few pounds of malted corn and you won't need any amylase!.
Alternatively, you can malt your own corn by soaking it in warm water for a few days!. I've read of people using feed corn for cattle, or even popcorn successfully!. After it sprouts, you can dry the jora in your oven at very low heat, grind it, and mash!.

Northern Brewer usually has it although they seem to currently be out of stock!. It's a small group of people though that are easy to get in touch with and actually speak to!.
