If you want the best Enological education in the world then look at this!.
If the 4 yr is too long for you check with the university extension programs in wine making!.
An Assistant winemaker will do many things and the breadth and scope og responsibilities very between wineries!. Some jobs include running the wine lab!. Wines are continually tested for pH, acid conc, microbio stability, etc!. Perhaps the the management of the cellar and/or assist the winemaker is decisions of harvest, wine treatment, and much more!.
The cellar master is concerned with the summer crush (crush berries into juice), tank management, the additions assigned by the winemaker, flirtations, etc!.
The money varies due to size of the winery, location, and education & experience!. That said you can make much more than your estimate above!.Www@FoodAQ@Com

Dont think people would choose a profession like that because of the money!.
You should do it because you are passionate about it, and then money shouldnt matter ;)Www@FoodAQ@Com
