Trick question!.
If you just want fast and horrible "wine", you can use bread yeast and add sugar to the juice!. The jailhouse "pruno" method is just to drop a clean slice of bread into the juice!.!.!. enough yeast will be alive to start the ball rolling!. Bread yeast, especially bread machine or quick rising, will ferment really quickly and the alcohol content will hit the point - about 12% - where the yeast is killed!. Then you drink it (if you can)!.
Different yeast strains tolerate different amounts of alcohol, brewers yeast only about 5%, bread yeast about 12%, and some wine yeasts can go to over 20%!. But the high strength yeasts work much more slowly at high alcohol concentrations!. And you want most of the yeast dead when you drink it or you get pretty gross gas, even painful stomach and gut distension not just belches and farts!Www@FoodAQ@Com
