The carbon dioxide in the beer is slowly releasing because the pressure has changed after you open the container or release it from the keg!. As it sits the temperature and pressure continue to change, allowing more carbon dioxide to convert to a gas!.Www@FoodAQ@Com

Initially the yeast uses sugar to make alcohol and carbon dioxide if you keep going you get acetic acid and more CO2!.
