Answers:
As a fruit of any kind ripens, the amount of sugar increases!. As sugar is what is fermented into alcohol, you want the ripest fruit you can get!. Incidentally, I don't think that banana wine is all that good!. If you are experimenting, may I suggest potato wine!?Www@FoodAQ@Com
