What would happen if I used a Wyeast American Ale II yeast in a Pilsner that requires a lager yeast.?!


Question: What would happen if I used a Wyeast American Ale II yeast in a Pilsner that requires a lager yeast!.!?
I want to brew a pilsner using a 4 lb can of EDME pilsner malt extract with 3 lbs of alexanders Light Malt extract and 1 lb of white rice syrup solids !.Then Use 1 1/2 ozs of Saaz Hops in the last 30 minutes of the boil!. I dont have a place to keep tempetures required to Lager beer so I am going to use Wyeast American Ale II yeast !. Anybody have an Idea whats going to happen here!.Www@FoodAQ@Com

Ale yeast is a top fermenter as against a lager yeast which ferments at the bottom of the vessel, so therefore a different way of 'skimming' the yeast!.

American ale yeast in that scenario would add a lot of fruity esters that are generally out of place in a Pilsener but that's the beauty of homebrewing right!? If you're simply looking to do a lager at ale temperatures go for Wyeast 2112 (California Lager Yeast) or White Labs 810 (San Fransisco Lager Yeast) both of which are lager strains attuned to warmer fermentations (~65 degrees optimal)!.Www@FoodAQ@Com

It won't be true to type, so I wouldn't enter it in any competitions as a pilsner!. Might be good, though!. Personally, I might find it a tad hoppy but it might be the next great style!. Look at "steam beer"!.

For lagering, I use a marine cooler on end with rotating 2-litre soda bottles filled with ice!. When they melt, they go back into the freezer for another round!.Www@FoodAQ@Com
