It could be that the substrate for the yeasts' fermenting activity is depleted!. You can take a specific gravity reading with a hydrometer to determine this!. If you get 3 successive days with the same or very similar reading then it has finished!. also you may want to check the reading to known data to determine if it has fermented enough!.

Some signs that it did not ferment enough are!.

The wine is sweet to very sweet!.

It tastes yeasty-the yeast is still actively fermenting but at a slower rate!.

Take a whiff off the top and if you gage a bit (be care not to suffocate {!?!?!}) then CO2 is being produced!.

Try to locate a local or on-line wine club for further advice!.Www@FoodAQ@Com

Treat it as you would an elephant, throw a crust of bread into the bucket!. Don't lose this opportunity to taste the brew!. My first success was with rhubarb wine, I was invited to a bottle party and was skint so I took along several bottles of my wine!. We men had to take turns walking a young girl who thought it was pop, three hours up and down the garden path and a gallon of sweet coffee and she was fit to be taken home by her teacher who had brought her to the party!.!.!. naughty boy!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.Www@FoodAQ@Com
