Question: I am Making pear wine, I have cut up my pears,added sugar and yeast, now what!?
I have the mixture in a 5 gallon bucket, I used distilled water to fill and 10 lbs of sugar!. Do I need to put airtight lid on now or wait awhile!?Www@FoodAQ@Com

Place a fly proof lid on it but not airtight, and yes, then wait!.
And wait!. Take a rest!. Go to sleep!.
In the morning you'll probably see a few bubbles!. If you don't, wait a few hours!.
Then it'll work like crazy, bubbling and foaming!.
You just wait!
When it slows down and almost stops rack it (siphon) into your secondary fermenter leaving the lees at the bottom and put a fermentation lock on top - or use a large balloon!.
Then wait until it clears!.

If you put an airtight lid on the bucket, the carbon dioxide produced would just blow it off and open the must to flies and bacterial contamination!. If your lid is fitted for an airlock, use that!.Www@FoodAQ@Com
