Homebrew Autumn Ale/ Oktoberfest?!


Question: Homebrew Autumn Ale/ Oktoberfest!?
I want to make beer for fall, but dont want a lager, so it wont exactly be an Oktoberfest!. Any suggestions on spices or flavor!?
If so, please let me know amounts of the spices!.

So brew a pale ale with the tastes of fall!. Coach mentioned pumpkin, but I think that's a little short sighted!.!.!.sorry Coach!. That and I dislike pumpkin!. When I think of fall/autumn I think of picking apples as a child!. I recently made an Apple Clove Witbier, but what about an Spiced Apple Ale!? Maybe a bit of cinnamon!? As far as recipe assuming you are brewing a 5 gallon batch!.!.!.

During your boil add about an ounce to two ounces of Grains of Paradise or maybe a cinnamon stick or two!.

After the boil allow the mash to cool to 140-145F and then steep a half dozen peeled and cord apples for 30 minutes!. Remove the apples, chill your mash and pitch your yeast!.

What about a nice stout!? Some roasted malt, with a hops that will impart a nice nutty/woody flavor that would remind us of those last few ball games of the year!.

Pumpkin-flavored beers are seem to be pretty popular around October!. Very Autumny!. Try spicing with just a little bit of cinnamon!.
