Sulfites are preservatives used in making wine!. ALL wine has some to a certain degree, and if someone has an allergy, they can prove problematic!. Headaches are usually the clue that you're allergic but in worst-case scenarios, they could induce encephalactic shock, which is potentially fatal!. Ask your physician about it!! They are preservatives in wine!. A good way to battle the ill effects of them is to eat cheese with your wine!. I can't remember how to explain it, but something in the cheese negates the impact of the sulfites and helps prevent headaches and wine hangovers!.
