Question: What is a good cheese with dark beer!?
Answers:
Go with swiss on a cracker, that is good for everything !Www@FoodAQ@Com

"Dark Beer" is a little broad to be specific but here area a few suggestions!.!.!.

Oatmeal Stout with aged or slightly sweet goat cheeses!.

Brown ales with salty sheep's cheese such as Pecorino!.

'Standard' stouts and porters with something like Gruyere!.

Barleywine with blue cheese!.

Rauchbier with smoked or aged Gouda!.

The others are probably right too though, it's hard to find cheese that sucks with just about any beer!. Gouda works pretty well with most malty beer so if you're looking for a safe bet it's not a bad choice!.

I suggest reading "The Brewmaster's Table" by Garret Oliver if you're curious about pairing food and beer!.Www@FoodAQ@Com

Laughing cow is a good choice!. Blue cheese with the mold is another!.Www@FoodAQ@Com

Red Leicester or an authentic Cheddar!.
I even like Cracker Barrel (the white) with stout or bitter!.Www@FoodAQ@Com

Something salty and rich like Parmagiano Regiano!. YumWww@FoodAQ@Com

Smoked Gouda is good with red wine or dark beer!.Www@FoodAQ@Com
