Answers:
Parmesan (parmiggiano) and mozzarella are traditional cheeses to use on lasagne!. You could also try buffalo mozzarella sliced over the top, which melts beautifully!.

Saute chopped onion, garlic, carrot and celery before adding the pork mince!. Try a little nutmeg in the ragu, it gives a lovely fragrance and flavour, as does dried oregano!.

Enjoy!

Notice the plug for Ragu by UKTV Food!? Julia's right but just try experiment depending on your taste and the taste of anyone else who's eating it!. Dont worry too much about making it authentic if your not selling it!. Maybe add a small amount of dried chillies for bite or even bits if Stilton between the layers!. Some finely diced onions perhaps!. Smoked Cheese could be an option!. Www@FoodAQ@Com

I use, ricotta cheese layered in spinkled with Parmesan, and a layer of mozzarella on top!.

Matt: She said "ragu" a term used for tomato with meat sauce!.!.!. not "Ragu" the gross stuff in the jar!.!.!.Www@FoodAQ@Com

When I make Lasagna I use rocotta (you can substitute well drained large curd cottage cheese), mozz, parm, sausage, jarred sauce with an added 1/4 cup of sugar and a few shots of tobasco or other "hot" sauces!.Www@FoodAQ@Com

mozzarella is the best and always tastes better with a little herbs sprinkled on the top Www@FoodAQ@Com

make sure you add cuminWww@FoodAQ@Com
