What will my apple cider taste like?!


Question: What will my apple cider taste like!?
I just finished brewing the wort for a hard apple cider (actualy kind of a cyser mead ) using 3 gallons of organic apple cider , 10 pounds of honey ,1 gallon of distilled water ,1 pond of blackstrap mollases,and 6 cinomon sticks!.
I will use campden tablets to sterilize the wort in the carboy because I didnt boil ( not recomended with fruits and honey)!.
I will use a sweet mead yeast from wyeast !.When Its done i will age it till christmas at 34 degrees in a 5 gallon keg!.presurized with co2!. What do you think this stuff will be likeWww@FoodAQ@Com

With the blackstrap molasses, it will likely taste like gingerbread cookies!. I would have avoided the molasses if it were me!.!.!.but that's just my personal taste!. The molasses has a lot of unfermentable solids so when it's finished fermenting, your final gravity will be atypically high compared to what you may be used to!. Good call on aging till Christmas, but with all that honey, do keep the leftovers (if there are any) and I'll guarantee it will be even better NEXT Christmas!.

I've done a similar cyser using 5 gallons of organic apple juice, 3 pounds of clover honey, an Earl Grey tea bag (for tannins) and Cotes de Blanc yeast!.

No boil, no campden tablets!.!.!.turned out fantastic!!! Medium dry and nice mouthfeel!. It also makes amazing snakebite with oatmeal stout!.Www@FoodAQ@Com
