I'd recommend a Pinot Noir!. Pinot Noir is a smooth silky red wine that is extremely fruity!. It is characterized with aromas and flavors of black cherry or rose petals along with hints of spiciness or herbal qualities!. Pinot Noirs are enjoyed for their soft velvety texture!. High in alcohol, they are full bodied but not heavy!.

I would serve a heavier white wine, such as an Australian Chardonnay or a light red, depending on the type of mushrooms used!. (Field vs!. wild)!. We just tried a Fox Run (NY) Cabernet Franc/Lemberger a couple of nights ago that I think would be appropriate with a cider based sauce!.

I would stay away from light grassy whites (Pinot Grigio, New Zealand Sauvingnon Blanc) that would be over powered by a full-bodied sauce!.Www@FoodAQ@Com
