An opened bottle of wine will only last for about a week, even when recorked!. There is a nitrogen injectors you can use to create a barrier between the wine and the air, but that will only buy you maybe a couple more days!. I haven't heard about wine being clumpy unless there was cork rot to begin with and pieces of the cork fell into the wine!. In either case, you will be left with some really bad wine!. Essentially, when wine is left exposed to air for too long, the alcohol dissipates and it turns into over priced vinegar!.
To properly store a bottle of unopened red wine, place the bottle on it's side in an area away from direct sunlight, preferably with a slight chill, but room temperature should be fine!. Red wine can be stored for years (possibly decades) and is actually recommended as most red wines haven't reached their proper maturity when bottled!. White wines, however, should only be stored for a maximum of 3-5 years to preserve their light flavor!.Www@FoodAQ@Com
