I'm afraid I disagree with the above answer!. Think of the way wine is paired with meats: you don't serve big wines with light meats; you don't serve full bodied wines with puny cheeses!. I know, I know, there are people who don't like the traditional rules but I had a beautiful meal of grilled duck with cherry-wine sauce ruined by a guest who offered to bring the wine and he brought a grassy Sauvignon Blanc!. It was a horrible pairing!
Anyway -- Is the Toscano a medium bodied red!? If so, pair it with Gorganzola, or an Oregon or other light blue cheese!. Creams, such as brie or camembert would also be good choices, as would a good nutty Parmesan or Swiss!.
The heaviest blue cheeses (Stilton or Danish) or heavy English cheeses need a heavy full bodied wine (the Cabernet) or Port!. The Cabernet would also pair well with an excellent aged Cheddar!.
The Louis Jadot would be good with the milder Jack cheeses or goat cheese!.

? Fruity and sweet white wines (not dry) and dessert wines work best with a wider range of cheeses!.
? The more pungent the cheese you choose, the sweeter the wine should be!.
For the Pouilly Fuisse you would want something with a strong flavor, like goat cheese, blue cheese, Roquefort, Comté or Gruyère!.
If the Sauvignon is white a soft cheese like Boursin or Camembert if it's a red then a semi hard like Sonoma Jack or Gouda
The Rosso Toscano would go good with Mozzarella or Manchego
