Answers:
it's best to let it ferment for 1 month in the primary fermentation vessel then rack it into a secondary one for another month!. then bottle and let it age for a smoother better finished product!. a good rule of thumb is when there is less than 1 bubble per minute in your airlock primary is complete!. u can make an airlock with some tubing or buy one they are like $1!.50!.

u want it ideally at 60 degrees and in the darkness!. leave the rice in there until your ready for your secondary fermentation vessel!. normally you'd syphon the liquid into the sec!. container but with such a small container i'd say just strain out the rice while you pour it in!. the longer you let it go the better it will taste and the closer your going to get to your highest possible alcohol content!.

also a package of wine yeast that makes 6 gallons of wine costs around $1!.00 and it will improve the taste!.

btw you are using a water bottle!. make sure let the cap loose or it can build pressure and explode!. really, it will blow up!.Www@FoodAQ@Com

I would give it a couple of weeks and take a long look at it to see if there are any bubbles still moving about!. If it turns out ugly and foul you can always add a little sugar syrup to bring it back into the land of the living!. Never waste anything you have taken time to make!. I once made some rose petal wine and some oak leaf!. One was scented and weak the other bitter and strong!. Together they were great!Www@FoodAQ@Com
