How long does wine rice take to ferment?!


Question: How long does wine rice take to ferment!?
im sure people r getting tired of all my wine questions!.ive been getting very good answers but i still have sum questions!.i have a small !.5l bottle of pure green grape and apple juice mixed with sum white rice its as big as an average water botlle!.it has changed from dark green to an amber color which i heard is a charateristic of sake!.its been sitting for about 38 hours!.how long does it take for such a small bottle to ferment!? and also should i leave the rice in there for the whole fermentation process!?and should it be stored in light warm place or a darker cooler spot!?Www@FoodAQ@Com

I think dark, warm is your best bet!. Light can damage alcohol!.

I usually judge whether primary fermentation is finished by watching the airlock, not the clock!. Depending on sugar content, type of yeast, conditions, desired alcohol level, etc, the amount of time can vary widely!. Usually, though, when there's no activity in the airlock for several minutes, primary fermentation is done and you can move onto the next step!.Www@FoodAQ@Com

In order to get any reasonable amount of fermentable sugars from rice it needs to be treated!. The breakdown of rice starch in Sake making is done with a bacteria and or other fungi culture!.
