I have a quarter of a bottle of white wine left in my fridge-can I use it in cooking or will it "go bad"?!

It's best if the top of the bottle is covered, but it should be just fine!. If it is covered well, it can last a while!. In fact, I use the "press & seal" wrap and keep mine in the pantry and it works well!. I have found that although I detest merlot wine, it is great in cooking!. I use a mid-range priced wine on hand for cooking at all times, I find that dry wines work best for what I cook!. I use wine in many dishes, from fish, to chicken, and beef!. It works well as a marinade as it not only adds flavor (great in red pasta sauce, salad dressing, and reductions) but, it is also acts as a natural tenderizer for beef!.Www@FoodAQ@Com
The rule of thumb for wine is, if it's not good enough to drink, it's not good enough to cook with!. There is a misconception with some who think that's what wine that isn't good to drink is good for!.!.!. cooking!. But that just isn't true!. I don't know how old the wine is, but if you do want to use it for cooking (great with a baked fish dish, like stuffed fillets of some sort toping with butter & herbs and then the wine!.!.!. spooning over while cooking!. If you don't think it tastes right to drink, you should toss it!.Www@FoodAQ@Com
zynr's right!. If you can't drink it because it has gone bad (and you can't keep a quarter bottle of wine unless you remove all the air and keep it for less than a day), you can't cook with it!. Think about it, do you want the flavor in your food if you didn't want it in your wine glass!?Www@FoodAQ@Com
