Guinness is perhaps the only beer which when served on draught (or draft) is done so with a Nitrogen pump!. Every other beer uses carbon dioxide to force the beer through the taps!.

Now, the using nitrogen is what gives Guinness that weird flowing effect and of course St!. James claims its very important to the flavor!.

So, the weird thing which is a widget acts to stream out nitrogen!. In effect giving you draught stye beer from a can!. You can guess where the name came from, then!.

BTW, draught bottles have a similar thing!. It's rocket shaped, though, and works each time you tilt the bottle back!. Yes, you're supposed to drink guinness draught bottles from the bottles and pour the cans!.Www@FoodAQ@Com

The are mainly for a proper head formation but also add carbonation to the beer!. They also serve a marketing angle!.
