When can I bottle my hard lemonade?!


Question: When can I bottle my hard lemonade!?
I'm on my first batch of hard lemonade!. It's been in the primary for 7 days now and the gravity has gone down from 1!.12 to 1!.10 and has a lot of carbonation!. I assume I have a 2% alcohol batch and I want 5% so I assume I'm looking for a reading of 1!.07 before I bottle!. However, I will still have a lot more potential for alcohol at that time!. How do I hold it to the alcohol content I want, make sure there is plenty of fizz when I drink it and sweeten it like lemonade when I go to bottle it!?Www@FoodAQ@Com

A homebrew filter
A carbonating stone & CO2 tank!.


Once your drink is at levels you want run it through the filter!. This will remove the yeast and stop fermentation!.
Add the sugar to desired level of sweetness and use the carbonating stone & CO2 tank to add carbonation!.
Bottle it!.

Otherwise allow the yeast to settle a bit!. Then rack to a secondary and refrigerate!. Yeast will further drop out!. What small amount of yeast that remains can be used for your carbonation!.
Add you sugar and bottle!.

**When bottling beer we add sugar(priming sugar)!. But just a small amount 1/2 to 1 cup!. If more is add the risk of bottles exploding does occur!. So you may want to allow it to set for just a day or two before actually bottling after adding the sugar to sweeten it!.Www@FoodAQ@Com

I can think of two ways to go!. If you are dead set on hitting the alcoholic content on the head, wait until you get to the right SG, then kill the yeast with metabisulfite!. Wait a day until that dissipates, then sweeten to taste with an artificial sweetener such as aspartame, add 3/4 cup priming sugar per 5 gallons, repitch yeast, and bottle!. If you aren't fussy about the level of alcohol, ferment to completion, sweeten artificially, and add your priming sugar before bottling!.Www@FoodAQ@Com

Pasteurize it at the level you desire, then re-refrigerate!. Www@FoodAQ@Com
