White wine is best because red will stain the chicken, unless you are using a marinara with it, then red is always the optimal choice!. But for cream sauces or light colors, go with white!. ;)Www@FoodAQ@Com

Actually the classic chicken dish [i know that it's a rooster] Coq au Vin uses red wine!.If you don't want to make it with a rooster use a 5-6 lb chicken instead

Red wine turns the meat red and can look weird!. Use white!.
