What wine would go really well with this dish?!


Question: What wine would go really well with this dish!?
Ok so here's my dilemma!. I have tried to pair wine with food so many times and I seriously suck at it!. I try to make the food based on what tastes good with whatever wine I'm having and they *always* come out tasting nasty together!. I have tried all types of wines and I have looked up so many different combinations and they always end up gross!.

So I'm going to list what dinner I'm making and I was hoping someone could tell me an awesome wine that would go with the whole meal (preferably under $30!.) If it tasted good with pineapple upside-down cake that would be a bonus but from what everyone tells me you should get a wine for the meal and a wine for the dessert (but I'm not going to do that so if the wine doesn't go with it that's cool too we'll just finish it before dessert!.)

- Seared salmon in lemon, butter and brown sugar
- Spinach salad with cranberries, candied pecans and feta cheese with a pomegranate vinegarette
- Roast potatoes with butter, salt, and spices
- Sauteed mushrooms in butter and salt

I am pretty set on the menu however if you know an amazing meal with a salmon-wine combo that would knock my socks off don't hesitate to throw it in here, I want a good combo!! Thanks! :)Www@FoodAQ@Com

I'd love to recommend a Pinot Noir because they go great with salmon and if it's wild mushrooms you are making the pairing will knock your socks off!. Unfortunately red wine with the spinach salad will probably be awful!.

A chardonnay could be okay, but you'd want a light non-oaked one for the salad and a heavier, buttery one for the fish!.

There really aren't any non-dessert wines that go with desserts, except maybe a big huge syrah, zinfandel or cab with a very bittersweet chocolate, so don't even attempt your wine with the cake!.

Here's a thought - buy a couple half bottles - an unoaked chardonnay and a light pinot noir!. Start sipping the chard before dinner and serve it with the salad and then move on to the pinot noir with the entree!.

If I'm getting really serious about pairing wines, I actually start with the wines and work backwards to create a menu!. Some stuff is such a pain in the butt to pair (vinegar in salad dressing) that I just skip it all together!.

Chardonnay would be fine, and with a budget of up to $30, you can get a good one!. But the feta cheese and vinaigrette are a problem there!. I would go with something with a little more bite!. Try a dry Gewurztraminer!. It is a little spicy and will hold up to everything!. Www@FoodAQ@Com

I agree with the previous one!. But anyway the best (and only) choice for fish dish would be white wine!. Well actually I've read that Pinot Gris is a good companion for salmon because it's a meaty fish!. Good luck with the dinner!!Www@FoodAQ@Com

A nice crisp Chardonnay should see you alright!. Desert wines are extremely sweet so don't go there!. You might try a Vodka sorbet between the main and desert as it certainly clears the palette!.Www@FoodAQ@Com

I'm guessing you are an American right!? If so you have some seriously lovely Californian wines and with salmon i would strongly recommend a good Sauvignon Blanc!. Mondavi certainly have one that's excellent!. Don't have Chardonnay with salmon - both are oily and really do not compliment each other!. You could also try a crisp slightly dry Rose
