Answers:
It is mostly the acids in the wine that help to tenderize foods!. The main acids in wine are tartaric acid and malic acid!. These acids are not as "harsh" in flavor as acetic acid (vinegar), but acetic acid could also be used!.

Most marinades will contain some type of acidic ingredient!.Www@FoodAQ@Com

There are a couple of different acids, actually, which work at breaking down the structure of the meat!. Tannins are one type, but I forget what the others are!. You should be able to find out, though, on a website like the food network!. Have fun, and Bon Appetit!.Www@FoodAQ@Com

There is an acid in the wine - sometimes collected from the wine barrel in crystallized form and used in baking - that would act as a meat tenderizer!.Www@FoodAQ@Com

The tannins help to break down the meat fibers and impart a flavorWww@FoodAQ@Com
