About 80-90% of the wine for sale in the US (I am assuming you are in the US) is ready-to-drink, it was not destined to be aged!. Some of the finer wines will benefit from holding them from 1-5 years, but no longer!. Most are close to their best within a year of purchase!.

By aging I assume we are talking years!. Holding wine for months is not aging it - that is just 'storage'

Tell the wine steward what it is you hope to do (like if it is a gift for a newborn - not to be drank for 21 years, etc!.) and ask for their recommendation!.

When storing wines - the best way is in a cool, dark place with no vibration!. Optimum temperature is in the low 50s, avoid large temperature swings if at all possible!. So refrigerators or a no-no!. (Wine coolers are designed not to vibrate so they are OK) Semi humid (about 50% rh) is better than dry or moist air!. Store the wine on their side securely so they don't' roll - this will keep the cork moist, a must because if air gets in through a dry cork it will ruin the wine quickly!.

Sediment in an well aged wine is normal and a good thing!. Older wines with sediment are best decanted so you can avoid getting the sediment in the glasses!.Www@FoodAQ@Com

Sure the first piece of advise is to consume the less expensive wines as soon as you can, this in practice generally means you should drink it within a year!. If you can store it properly, it will last 2-3 years!. White wine doesn't benefit from aging!. Red wines can benefit, if they are particularly tannic or acidic -- think Cabernet Sauvignon!. Pinot Noirs, though red, generally don't benefit from aging since they are on the light side!.Www@FoodAQ@Com

It depends on the wine!. If it is a white wine, sweet wine or fruit wine!.!.!. drink soon do not age!. If it is a red wine you may age it!. If you plan to age it, make sure you keep the bottle on the side!. This allows for the cork to stay moist and keeps the wine fresh!. Unless you are a real wine Connoisseur, drink up within 5 years!.Www@FoodAQ@Com
