This is a very sweet white wine that is very expensive! Made from grapes under special conitions,a real treat for some one who loves wine!

Ice wine (or icewine; German Eiswein) is a type of dessert wine produced from grapes that have been frozen while still on the vine. The sugars and other dissolved solids do not freeze, but the water does, allowing a more concentrated grape must to be pressed from the frozen grapes, resulting in a smaller amount of more concentrated, very sweet wine. With ice wines, the freezing happens before the fermentation, not afterwards. Production of the wine begins as soon as the grapes are frozen.
In countries other than Germany, Austria and Canada, grapes are picked then placed in freezers until frozen.

Due to the labour-intense and risky production process resulting in relatively small amounts of wine, ice wines are generally quite expensive.

Canada and Germany are the world's largest producers of ice wines. About 75 percent of the ice wine in Canada comes from Ontario.

Joe S is correct. I come from the wine region in Ontario - where most of the ice wine is produced, and he gave you the correct information on how it is produced.

Also, try buying grapes from your store and freezing them - keep them in the freezer and eat them frozen, they are the best tasting grapes ever! That is why the frozen grapes make the best wine ever.
