The premise you put on the question is incorrect.
Alcohol may be produced in open vessels, and indeed it is in several cases, such as in bio-ethanol production and in red wine making. Since the alcoholic fermentation releases carbon dioxide, the gas prevents further contact with air during the most active phases of the fermentation.
However, the use of closed vessels may enable a better quality control of the fermentation, specially in slower processes such as white wine or beer production.

Alcohol is a volatile mixture; when air mixes with it, it changes composition, affecting the taste.
