It depends on a few things: The density of the icecream and if there's any extra denser ingredients.
There really is no easy way to figure this out, other than to put your "cup measure" on a scale, set the scale to zero (use the tare button), fill the cup with the icecream you want to weigh, and then weigh the icecream.
But other than that, it would be a lot of chemical "molar mass" and density calculations and way more work than you'd ever imagine.
