Unfortunately, Shiraz is not the best cheese wine, but a good bet is to go with something hard and aged - Pecorino Romano, Parmesan, Gouda (a smoked Gouda might be good).
Stay away from stinky, soft, creamy cheeses which pair better with acidic white wines (or more acidic reds).
