Actually, green (Thompson) grapes will turn a nice a golden color. This is when the sugars are well formed in the grape and they are at their peak of flavor. This where golden raisins come from. I think your grape picker was in a different vineyard the next day.

Given the order in the purple to green this man is picking two different varieties of grapes.
Grapes when not ripe will be green. As they ripen purple, red, black grapes will turn the proper color. Green grapes will stay green but they will get larger and juicer as they mature.

Grapes will all last pretty much the same length of time if they are stored properly. Stored wet or mushed together they will get soft faster and get bruised. I find if left as a cluster they will last longer as well.
