Question: Could I get in trouble if...?
My friend is driving and we are both 21.. If she is driving and I am drinking while she is driving but she's not drinking?

Yes because it's illegal to have an open container of any kind of alcohol in a vehicle. Alcohol must be unopened and stored in the trunk of a car when the car is moving.

No but if there's alcohol in the car and you get pulled over the police may test your friend to ensure she isn't drinking
