Yes you can, but it has to be dried out as almost every fruit,vegetable is 98% water, actually any biological or plant matter is about %95 water or more, so it has to be dried. No I do not suggest smoking apples like in a pipe, but smoked dry veggies and fruits are great to eat.
In the case of apples yes butt they haves to be dried first.Smoking apples is a tricky undertaking at best.You have to use maple wood and be careful you din;t over do it or the whole batch will be inedible.
Apricots and peaches are fairly easy to dry. lay the halves fresh side up and cover with cheesecloth and I pit my is a car or truck cab that is not being used. After drying stew or boil them and keep apples and apricots under refrigeration or in a cool dry place. Beef and venison can also be dried and smoked too but I don't care for it myself.
