Question: Wild things that grow in ontario canada that i can make booze from?
i am a hobby brewer but lately i have been quite interested in making wild brews from my area . i have made wild grape wine last summer that was amazing , im gonna make raspberry wine also but those are the only things i know of that grow out here , i live in a rural area so whatever you know of that grows in ontario is likely to grow here , is there any grains that you know of that grow wild that are like wheat or barley that i might possibly be able to make a beer type brew from ? please expand as much as possible

Wild grain would not work. You need to malt it first. Even if you had large fields of barley you would still have to learn to malt it. It is not an impossible job but it is very difficult, especially to make sure it is malted not sprouted. The closest you will get to making your own beer grain is possibly roasting some of the lighter grains (like 2-row) into darker ones (like caramel malts). Brewers do not make beer from raw grain, they make it from malted grain.

A large potion of grain for beer in the US comes from Canada. It is also a very good climate to grow hops. Look into brewing beer. And specifically look for malt from the Canada Malting Company. The company was already the largest malting company in the world when it was purchased by Grain Corp. It also happens to have the cheapest malt around.

Hops are a plant that pretty much need cold to grow. For this reason most of the American hops we get are for the northern US and Canada. But there are so many different kinds of hops. It really would depend on which you wanted.

As for wine, any fruit that has sugar you can make wine out of. You can also use things like maple syrup in beer. Apples can make a wonderful cider. I would suggest going to your local farmers market and checking what they grow. If you can find a local apiary (that is a person who raised bees and collects honey), you can make mead, melomel and other honey based wines.

Hi The Asker, You can use nettles elderflower and berries. any edible berry or fruit. Ingredients like barley and other grains can be used but will need cooking. If you can get a book on wild foods in your area you should in theory be able to make a wine or beer from most things , some will work better than others. It might be an idea to find an established website in your area because they will be best to judge the seasons and best able to tell you what can or shouldn't be used. Some "Bushcraft" sites may also help. I hope this is of some use. all the best. Rab

I am a Chef and used to brew my own.

Well I live in New Brunswick and these are some of the wines I've done over the years.
Rose hip
Dandelion
Blue berry
Rhubarb Not strictly wild I guess but you can find it growing just about anywhere.
If you can get your hands on a cook book called "Out of Old Nova Scotia Kitchens" it has so interesting wine and beer recipes, including a very old Spruce beer one that starts out "Take 7lbs of good spruce and boil it well til the bark peels off."
Can't help with the grain though I have seen a recipe for Seed Wheat Wine
