yes you could make wine or beer pretty easily from scratch but liquor takes a lot of distilling equipment and is probably to flammable to do at your house unless you exactly know what you are doing. for the first two you can find books on it a local book store or library
In many ways. sometimes just leaving fresh apple cider to the air, the natural yeasts in the air will make it ferment. You must have sugar and yeast to make alcohol. I have what I call the 5 recipe:
5 gallons of water
5 lbs of sugar
2 and on half cans malt extract
5 packets dry yeast
Mix these well in a metallic pot (NO PLASTIC)
cover it with a towel. The yeast and sugar will start to do it's magic. Once a day there will be a bubbly scum on the top. spoon this off. But only once a day. This bubbly action means your concoction is working. when you discover that the bubbly scum no longer appears, you are ready for bottling. Siphon the liquid into bottles that have a teaspoon of sugar in the bottom. Seal them tightly. You must siphon as you don't want any of the sediment at the bottom in your bottles. Let them rest for at least two weeks before you taste them. Now I should tell you that some of the bottle may explode, so keep them in an area where this won't sully up it's surroundings. You will wind up with a champagne-like beer. this recipe is a good introduction to making an alcoholic beverage. from what you learn from this process you can graduate to more complicated methods. You can even add a spice bag in your mix to add other flavors.

You can. If you are over 21 (in USA), you can make up to 200 gallons of wine and 200 gallons of beer, legally, for home use. There are good books of directions by Papazian (beer) and Berry (wine).

Yes. How you do it depends entirely on what you want to make. Beer is different from wine, which is different from say whiskey, which is different from..... know what I mean?
