Dixie Blackened Voodoo.
Modelo Negra or Dos Equis Amber will work in a pinch.
A good Porter or Brown Nut Ale works well with Cajun. I tried it with an IPA once. I'm not sure if the food made the beer taste bad or if the beer made the food taste bad...either way, it didn't work for me.

Not alcoholic, but a Bart's is awfully good with Cajun.
