Question: How long will a bottle of opened white wine last in the fridge?
I plan on using it to cook with on two different nights, and didn't want it to go bad. I know red wine doesn't do well AT ALL in the fridge, so what about white wine?

There are multiple variables to consider, type of wine, red, white, etc.
An opened bottle of white wine will stay fresh in the fridge for at least several months, and sometimes for years, however its best to seal it or even cover the lid. Oxygen in the fridge air will convert the Alcohol into Carboxcylic acid, basicaly turning your expensive wine into expensive vinegar! although this takes some time (roughly 2 weeks open at room temp, it may last a lot longer in the fridge. ) this proccess starts as soon as the bottle has been opended. over night you may only notice a slight change in taste, apart from that the wine is perfectly safe to drink or even better COOK WITH!
Once a bottle of wine is opened, the oxygen in the air starts a process that initially softens the flavors and opens up the aromas of the wine. As this process (oxidation) continues over many hours and days, the wine is ultimately made undrinkable. The trick is to use the wine before it becomes unpalatable or to pour it out before bad wine is served to guests.
You can (and usually should) refrigerate recorked bottes. You can buy stoppers and gadgets to create a slight vacuum in the bottle. You can get systems that put a layer of inert gas in the bottle. All these items and efforts are aimed at slowing the oxidation that will eventually destroy the wine.
What makes the whole thing tricky is that the wine will not go immediately from good to bad. The wine will, at a point, begin to progressively develop tastes that are unpleasant. Just like milk that is going bad, each person has a different point at which they identify the beverage as having gone bad.

Whether it's red or white, wine doesn't last very long once it's been opened. Wine, like the fresh fruit that creates it, is perishable and oxygen is the number one enemy. However, since you'll be cooking with it, you shouldn't have to worry too much. It is recommended to finish a bottle within 1-3 days after opening it, which you should be find with if you cook with it the two different nights within that time frame. If it's more than a few days, the wine should remain fairly flavorful and decent.

What you will notice over time is a change in the taste; the rate of this change and how quickly you notice it depends on a variety of factors of course: you taste buds, how tightly it was sealed, the type of wine, etc. However, once it goes bad you can be assured that it is not toxic to you if you do use it still. The main noticeable quality is that the taste is off.

Maybe a couple of days. It just wont taste quite the same as when you first opened it.



It should be okay for weeks if you put the cork or lid on properly
