Its actually a combination of tradition and preference. There are a plethora of different specialized glasses that you honestly need a bar tender's manual to find your way through, however, to have a good bar you only have to have 3 basic glasses.
Type 1: Wine glasses - For wine, duh. lol, There are several styles that are generally divided into one of two categories; red or white. White wine glasses usually have a small reservoir and are petite when compared to red wine glasses which have larger reservoirs and shorter stems. When shopping for wine glasses you will find that those that seem as if they should be held by their stems are for white wine (which is served chilled) and those that seem as if they should be held by their reservoir are for red (served at room temp). I personally own both red and white wine glasses, but you honestly only need one, in which case you should select one for the variety you serve the most. Avoid stemless wine glasses, they are gaudy and no matter what anyone says, only red wine should ever be served in them. Where as white wine can be served in a red wine glass (and vice versa) even though it is not the optimal arrangement.
Glass type two: Low ball. A low ball or rock glass holds between 6 and 10 ounces and is used to serve liquors such as scotch straight up or on the rocks (with ice) or a cocktail consisting of a single mixer like bourbon and coke. If you regularly serve your drinks straight up or on the rocks, invest in the fancier variety, however if you are more likely to serve rum and coke or vodka and cranberry simple ones will do just fine.
Glass type three: High ball. This is a 8 to 12 ounce tumbler used for cocktails will more than one mixer such as a Sea Breeze. You could also serve frozen margaritas in this vessel without raising any eyebrows.
I really recommend CB2's "Marta Glass" line, its interesting and inexpensive even if their dimensions don't fit the textbook definitions of low or high ball glasses. http://www.cb2.com/family.aspx?c=11033&f…
Once you've established your standard collection of glasses you can move on to:
Shot Glasses
Collins Glasses
Champagne Flutes
Margarita Glasses
Brandy/Cognac Snifters
and other specialized glassware.
