What should I substitute for dry sherry in this recipe?!

Chicken broth or water.
The recipe calls for 1 tablespoon of sherry, I would either leave it out completely or increase the chicken broth in the recipe. Althernatively you could try 1 teaspoon vanilla extract or 2 tablespoons orange or pineapple juice.
