Can I replace beer in a recipe?!


Question: Can I replace beer in a recipe?
I have a recipe for ecuadorian chicken stew that calls for two cups of a medium beer and I am wondering if I could replace the beer with water and bouillon cubes.

You can, but why do it. The alcohol will evaporate while the stew is cooking.

What you want is a pleasant tasting beer that will impart a smooth flavor into
the chicken. Try one of the following beers and you will like the result.
- Dark Lager - Beck's Dark and Killian's Irish Red are OK.
- Brown Ale - Newcastle Brown Ale and Brooklyn Brown Ale are both good.
- Scottish Ale - Belhaven and McEwan are full of flavor

Since you're not a beer drinker, I suggest Beck's Dark because you can buy it
by the bottle.



Generally yes, but the beer is used not only for flavor but also to tenderize. When cooked all the alcohol evaporates however.



You could if you wish, obviously, but it won't be the same or taste as good, obviously.
