What can I replace dry sherry with?!

Dry white port, dry madeira, dry vermouth
use any of these that are not dry but dilute then with stock
Or just use sherry. The sauce will be a litter sweeter but have that sherry smoothness.
"I have a book called 'Substituting Ingredients' by Becky Sue Epstein and Hilary Dole Klein. In that book they say that a good substitution for sherry is either an equal amount of Madeira or Port.
Another book I have called 'Food FAQs' by Linda Resnik and Dee Brock says that you can use Madeira, Marsala, Port and Sherry interchangeably in equal amounts in a recipe. It also says that for a recipe that calls for 2 tablespoons of a heavy wine (one of those four listed above), you can substitute 1/2 cup dry red or white wine.
2 tablespoons sherry, substitute the following: 1 to 2 teaspoons vanilla extract or 2 tablespoons orange or pineapple juice.
To substitute sherry in a marinade: for 1/2 cup sherry use 1/4 cup vinegar + 1 tablespoon sugar + 1/4 water OR 1 tablespoon vinegar, plus chicken stock or water to make 1/2 cup.

white wine.
it is the closest. sherry is after all fortified white wine. of course, it has nutty flavors, but in cooking, it is not a big problem. After all, it's stir fry. No need to worry about the subtle flavors. White wine will work. Wine wine has acidity, so it will give a touch of sourness.
If you just wanna add acidity and do not have white wine, use lemon or lime. lime is milder, I guess.
But why fino sherry? I wonder... To give a little little body? hmmm. I don't know.
You can skip it all together, by the way.
I would just leave it out of the recipie and not substitute anything. Probably uneeded anyway.

all could be a fair substitute in a stir fry recipe.
