Have tried many white wines with my favorite charbroiled salmon. Now it is always a Pinot Grigio. If not available I order a Sauvignon Blanc or as a last resort a Riesling.
If you prefer a red wine, Pinot Noir is the only red I found that will pair well with Salmon.
Pinot Noir is a perfect pairing for salmon. Unless you've poached it, in which case the fish may be a little too delicate for the wine. Try a big buttery Chardonnay for poached salmon.
The traditional one is Beaujolais, served slightly chilled. And, yes, it is a red wine.
My mother prefers white wine, with fish!
