Why do lemon seeds "bob" up and down continuously from top to bottom in Weiss beer?!

Question:

Why do lemon seeds "bob" up and down continuously from top to bottom in Weiss beer?

Answers: The same reason raisins bob up and down in soda. The CO2 collects around the seed until it can lift it to the surface of the beer where the CO2 is released sending the heavy seed back down to start the process all over again until there is not enough trapped CO2 to raise the seed.
Any REAL bar should remove the seeds from your wedge prior to service. That's just laziness. Source(s):
