baking powder is a chemical leavening agent made w/ an acidic agent and an alkaline one: most are sodium bicarbonate (baking soda) and cream of tartar. When exposed to liquids it releases CO2 gas, which leavens doughs & batters. Double acting Baking powder works by releasing CO2 when wet & then when heated.
The diff. between baking powder & soda is the cream of tartar.
