Distillation is actually the high-brow way to concentrate the alcohol in a beverage, turning wine into brandy, etc. The other way is to leave a tub of drink outside in freezing weather and let the water turn to ice, which you lift out of the tub. What remains has a much higher alcohol concentration. That's how you turn apple cider into applejack.

However, freezing your booze is not as good as distillation because distillation removes many of the impurities in the drink that could cause hangovers. Freezing leaves them in. So if you drink applejack, you'd better go easy. You'll get drunk, all right. But you'll pay for it afterward with a big headache.
