I dont think it has changed much over the years. People are better with things with like Drunk Drinking certainly and seem to handle it with more care, but the overall consumption has remained constant since about the 1960s. Something like 70% of adults alcohol and it has been at the level for many years.
I wrote a paper on American Drinking habits back in college in the late 90s. I forgot alot about what I researched, but i remember that there was a period in the 80s where alcohol consumtion seemed to peak . I think it was around 1982 or something. But I would bet anything that the local bars do just as well now as the did in the 90s, 80s, or 70s.
