What kind of champagne do you use to make a mimosa?

I agree with most people. Cheap.

In Mimosa, the juice will overcome the taste of champagne and cover the unique flavor that we normally sense when we do wine/champagne tasting. What you want in Mimosa is the bubbly alcoholic drink that champagne is to add to the juice. So, juice is the important factor here.

My suggestion would be to experiment with different juice. Personally, I love orange-pineapple juice to add to a twist. I have also tried orange-peach-pineapple with interesting results. Anything banana is not so good.

As for champagne, that's the reason I stock $5 bottle bubbly in my house.
