While wine is served in multiple size bottles, why is the 750mL size so dominant at least in the U.S. wine industry? 3/4 of Liter just seems like an odd size to me.

Very good question.

It was by tradition that many wines are made in the past in 700-800 ml bottles. It is finally formalized in 1970's.
